Racing seats have been installed! 
I chose the Sabelt X-Pad for the driver seat and the Sabelt GT-Pad for the passenger seat. 
The X-Pad is a smaller seat overall and fits my petite body type perfectly. 
The GT-Pad is a much larger seat, overall, and has different seat pad options to fit any size occupants.  Each pad option is an extra cost, fwiw, and I went with the middle sized pads to be able to fit a variety of different passengers. 
The seats are mounted with sliders to aid in passenger adjustability as well. Currently, the OE 3 point seatbelts are being used until the car can get it's roll cage welded in. After a nice curvy mountain drive, the 3 point seatbelts work well and will be adequate for my HPDE sessions next weekend at Michelin Raceway Road Atlanta with National Auto Sport Association Southeast Region.

Great thread! I had a 2013 Mustang GT. I regret that I never got to take it to a track and really see what it could do. Looks like a blast!
